Abstract
Food industries are one of the basic pillars of achieving food security in Egypt. Food industries contribute to the development of the national economy by exploiting the resources available in society. They represent a prominent position among the manufacturing industries that use agricultural materials as raw materials. The research problem was that despite the increase in local production of strawberry jam, thus meeting the need for local consumption and creating a surplus for export, the local production of Qaha Company from these factories does not exceed 0.49% of the total local production of strawberry jam, and this is due to many of the problems it suffers from. The most important of which is the lack of cash flow and the failure to renew and replace machines, The research mainly aimed to identify the economics of manufacturing strawberry jam through several sub-objectives. The results showed that the amount of local production of strawberry jam has taken a general increasing trend that is statistically significant at a significance level of 0.01, where the annual increase reached 2.44 thousand tons, and it reached The rate of increase is about 5.27% annually, and the amount of local consumption of strawberry jam has taken a general increasing trend that is statistically significant at a significance level of 0.05. Also, the total value added from the manufacture of strawberry jam in Abu Kabir factory amounted to a 350 gm jar package, a 350 gm package of 65% concentration, a 400 gm jar package of 65% concentration, and a 900 gm jar package amounted to about 2.656 million pounds, 3.028 million pounds, 5.444 million pounds, 34.5 thousand. pounds, respectively. The added value also represents about 169.7%, 112.3%, 480.4%, and 189.6% of the total costs of manufacturing strawberry jam in the factories and packages under study, respectively. It also represents about 97.2%, 97.2%, 99%, and 97.5% of the total revenue of strawberry jam manufacturing in the factories and packages under study, respectively. As for the manufacture of strawberry jam in Abu Kabir factory, a package of 400 grams, 65% concentration, the total costs for both the package and the kilogram amounted to about 10 pounds, and about 28.7 pounds, respectively, and the net profit for both the package and the kilogram amounted to about 6.95 pounds, and about 19.87 pounds, respectively. The product margin and product incentive amounted to about 6.95 pounds and about 41%, respectively, and the added value of the package and kilogram amounted to about 16.52 pounds and about 47.21 pounds, respectively. In addition, it can be concluded that the production volume that is lowest in the total average cost of producing a kilogram of strawberry jam is about (41.6 thousand kilograms), with an average production cost estimated at approximately (3.05 pounds/kg).
